Mongo Guisado Recipe

- Stewed Mug Beans

Mongo Guisado Ingredients:

1 cup belly pork; sliced
1 cup mongo beans
4 cloves garlic; minced
1 small onion; chopped
1 tomato; sliced
5 cups water
Salt to taste
1 cup malungay or ampalaya leaves

Mongo Guisado Cooking Procedure:

In a skillet, sauté the garlic, and onion.  Add pork and tomato, then season with salt to taste. Continue sauteing until pork renders fat and edges turns brown. Set aside as a mixture.

Boil monggo in casserole until tender. Add the mixture, simmer, and stir. Add the ampalaya or malungay leaves before serving.

the easiest way to boil mung beans is to put wide-edged knife inside the casserole. then pour slowly the beans directly touching the knife's edge. when done, take out the knife and wash the mung bean as usual.

Perhaps more delicious if they will add up a little peanut butter on the guisadong monggo to make the taste creamier... yummy... yumm...yumm;-)

Monggo
This is one of my fav. Another way is to put about 1/4 cup of bagoong on the pork when it's slightly brown then don't stir it, just leave it that way until the bagoong is slightly drying so the smell will be minimized. Put tomatoes, Stir it before combining the boild monggo to it. Make sure to mix the remaind sauce from d frying pan with monggo before adjusting taste by salt or fish sauce(patis). Add chicharon on top of mongo and let it soften before adding the ampalaya leaves or malunggay.
