Ilocano Dinengdeng Recipe, the Inabraw Version

 

Dinengdeng (Inabraw) Ingredients:

1 clove garlic; minced
1 onion; chopped
2 tomatoes; sliced
3 eggplants; sliced in halves 1” in lengths
1 cup jute leaves (saluyot)
1/2 cup water
Bagoong isda to taste
Cooking oil

Denengdeng (Inabraw) Cooking Instructions:

Saute garlic, onion, and tomatoes. When tender, add water and bring to a boil. Add bagoong to taste and eggplant. When slightly tender, add the saluyot. Adjust seasoning according to taste.

Cooking Tip:

If you want to add meat on it, then simply saute garlic, onion, and tomatoes. Add and brown meat and spice with salt. Add water and ....

You can also add leftover fried or grilled fish on it.

Thanks for the recipe. I always know how to make dinengdeng but you cannot do it the way the people from Paoay does. My brother in law makes the best dinengdeng and the rest of his family

when i cook inabraw or dinengdeng use grilled tilapia.. more taste enhancer than fried tilapia. .just put all ingredients together & place tilapia at the bottom

pakulo lng ng tubig tas lagyan ng bagoong na isda saka ilagay sitaw,talong,kalabasa,saluyot,bulaklak ng kalabasa,talbos ng sitaw tas pag half cook mga gulay lagay ung pritong isda or inihaw na isda..timplahan n lng ng asin according to ur taste...thanks

madami kasing way ang pgluluto ng dinengdeng pag tagalog ginigisa tlga nila. pero kpag samin n ilokano hindi. we just boil everything we have in our backyards. thats ilocano life. we eat what we have in our backyrads. kya masipag k lng buhay kna :)

well ang alam ko pagdenengdeng hindi na siya iginigisa just like this first pakulo ka ng tubig with onion at luya,pag kumulo saka mo lagyan ng bagoong isda at ilagay na rin ung inihaw na bangus o isda at kasunod na rin ang mga sangkap na gulay like talong,sitaw,at saluyot then konting salt to taste salamat.....

hi...salamat sa mga recipe nyo nakakatulong tlaga ng marami lalo na sa mga my kaunti lng kaalaman sa pagluluto....................just want to comment sa dinengdeng;sa ilokano walang kamatis sa dinengdeng..salamat..

i havent tried it but it does seem authentic. only when the recipe calls for fish bagoong (or bagoong ilocano) can it be labelled as "authentic".
