Ilocano Dinengdeng recipe, the Inabraw Version, is a boiled vegetables of jute leaves, tomato, eggplants, and bitter melon seasoned with bagoong isda.
Dinengdeng (Inabraw) Ingredients:
1 clove garlic; minced
1 onion; chopped
2 tomatoes; sliced
3 eggplants; sliced in halves 1” in lengths
1 cup jute leaves (saluyot)
1/2 cup water
Bagoong isda to taste
Denengdeng (Inabraw) Cooking Instructions:
Saute garlic, onion, and tomatoes. When tender, add water and bring to a boil. Add bagoong to taste and eggplant. When slightly tender, add the saluyot. Adjust seasoning according to taste.
If you want to add meat on it, then simply saute garlic, onion, and tomatoes. Add and brown meat and spice with salt. Add water and ....
You can also add leftover fried or grilled fish on it.
