Paksiw na Isda (Fish in Vinegar Sauce) recipe is a Filipino dish where fish is simmered in vinegar, ginger, salt and other condiments.

Paksiw na Isda Ingredients:

1 /2 kilo fish of choice (milk fish, white fish fillet, sapatero, etc.)
1 bitter melon (ampalaya); quartered
1 eggplant; quartered
3 long green pepper (siling haba)
1 ginger root; crushed
1 head garlic; crushed
3/4 cup vinegar
1 cup water
Fish sauce
Salt

Paksiw na Isda Cooking Instructions:

Soak the ampalaya in salted water to remove the bitter taste. Set aside for 30 minutes.

Arrange fish in a skillet. Top with ginger, garlic, and siling haba. Add vinegar and bring to a boil. Add water, cover, and simmer until the fish is cooked. Add ampalaya, and eggplant.  Season with fish sauce according to taste.  Cook until the vegetables are done.

Cooking Tip:

Best if keep refrigerated for several hours, then reheat before serving.

Sour Paksiw
Water and Vinegar easily mix. You did it right by adding water but if you add half cup of water, remove half cup of mix water and vinegar as well. Rather than wait for the sabaw to disappear by keep boiling the paksiw and it will be overcooked..It is a matter of trial and error or until the sourness of your paksiw is removed or according to your taste. .

Hi, I recently made paksiw na isda but I happen to put too much vinegar. I tried to fix it by adding water. But by then, the fish gets overcooked. What do I need to do to to lessen the sourness?

ang paksiw ay di kailangan ng kamatis...but if you want you can put some...but really no kamatis sa paksiw, lol

talagang yummy lalo n kung ang ipapaksiw ay sapsap with some lugs of olive oil or virgin coconut oil and use it as a palaman in pandesal. . .
