Filipino Style Chicken Curry Recipe

 

Chicken Curry Ingredients:

1 kilo chicken; cut into desired pieces
2 cups coconut milk
1/2 cup curry powder
1 bell pepper; sliced
1 medium potato; diced
1 carrot; diced
4 cloves garlic; crushed
1 small onion; chopped
Fish sauce
Ground black pepper
Cooking oil

Chicken Curry Cooking Preparation:

In a saucepan, sauté garlic, and onion. Drop the chicken and season with salt and pepper. Stir fry the chicken until light brown. Mix the curry powder and let simmer for 5 minutes. Pour coconut milk and drop the potatoes, and carrots. Boil for 10 minutes or until the sauce thickens. Drop the bell pepper and season with fish sauce according to taste. Serve hot!

Cooking Tip:

Always dry chicken well with paper towels before placing into hot frying pan so it won't stick.

Additions to chicken curry recipe
I usually add some ginger and bay leaves when cooking the chicken to get rid of the gaminess of the chicken. And give a nice scent to the curry.

Also if ever you end up making it too salty for your taste, what I add is a cup of half and half or cream to neutralize the taste. Adding more coconut milk didn't work for me.

hmp. i think masyadong too much ung curry powder,, 1 tbsp. is enough for 1 kl. of chicken.. over kana man sa pag gamit ng herbs and species..

Curry Chicken
I had this dish yesterday for lunch at the Island Cafe. It was so delicious that I gathered the ingredients and prepared it for dinner tonight. It tasted just like the restaurant version. I am thrilled and will serve this to friends!
