Warek Warek Ilocano Food Recipe

Warek Warek is an Ilocano recipe made of grilled pork's tongue, liver, and intestine blended with pork's brain or mayonaise.

Warek Warek Ingredients:

Pig’s meat and entrails (tongue, liver, intestine)
Onion; thinly sliced
Salt and pepper
Calamansi or lemon juice
Pig's brain
Mayonnaise (optional)

Warek Warek Instructions:

Parboil intestines with sliced lemon or calamansi to remove the odor.  Parboil tongue until half cooked.  Wash and clean well the liver.

Grill intestine, tongue, and liver. Slice into 1” long and 1/4” thick (or your desired sizes), then place in a large bowl. Mix the slices of onion and boiled brain. Balance seasoning with calamansi juice, salt, and pepper according to taste.

Cooking Tip:

If pork's brain is not enough or not available, you may use mayonnaise as a substitute.

Boil the brain in vinegar and same vinegar that you will use in the recipe.

It's one of my favorite dish which i love to prepare...mas masarap gumawa nito kung ang karne ay galing sa ulo ng baboy kasi mas malasa ang taba taba...WAREK WAREK? ngayon ko lang narinig to..pero sa tingin ko pa lang kung pano iprepare to dinakdakan tawag namin sa Baguio...

Korek Chef Bryan! Warek warek are for the mammarteks mostly. Lamang loob talaga, pangpulutan sa gilid ng kalsada kasama ang Ginebra. Dinakdakan is indoor orientated, pangpulutan na pangpamilya pa.

actually, dinakdakan is an ilocano dish.. it's only here that i heard of warek-warek.. we usually call this dish dinakdakan..

and the pie you are asking is called "empanada".. orange in color, with longganisa, veggie and egg inside..

it's my first time 2 know that there's ilocano version of dinakdakan.... i would like 2 know how 2 make d pie they r sellin this in laoag.... its a dough filled with papaya strips and lastly break an egg close d dough n deep fry it.. thanx

I have not come accross this recipe. Since we do not have pig's meat in Kuwait. Can pig meat be replaced by lamb meat>

I've never seen a Warek Warek recipe anywhere. I do know how to prepare this. This is kudos to your site for having it. :)
