Filipino Beef Caldo Recipe

(Nilagang Baka)

Nilagang Baka Ingredients:

1 kilo beef; cut in chunks
1 small head cabbage (repolyo); quartered
1/4 kilo Chinese cabbage (pechay)
2 potatoes; quartered
1 tablespoon garlic; crushed (optional)
1 onion; sliced
1 tablespoon peppercorns
Fish sauce
Salt to taste
2 beef boullion (optional)
1 lemon or 5 kalamansis
Soy sauce

Nilagang Baka Cooking Instructions:

Fry the potatoes in 3 minutes. Set aside

In a stock pot with no water, simmer the onion with the beef on top until onion renders its juice and beef changes color. Season with fish sauce,cover, and let stand for 5 minutes. Add water to cover, garlic, and peppercorns. Boil for at least one hour. More water maybe added if the beef if tough. When beef is tender, add the potatoes. Let stand for 5 minutes. Season with salt according to taste or simply add boullion whichever you prefer. Add repolyo cabbage and Chinese cabbage. Cook until done.

Remove from fire and serve hot! Side with fish sauce and lemon (or calamansi) juice or soy sauce with lemon (or calamansi) juice whichever is your preference.

Cooking Tip:

Boiling the beef chunks slowly and gently over low heat brings out the flavor of the meat, and keeps the meat very tender.

But but but....if you don't have much time and you want to expedite the cooking process, use "pressure cooker" to soften the meat of the beef shank. When tender, add the necessary ingredients.

Lahat cila masarap
Ang sa amin ang alam ko ang nilaga dito langka at batuan na may leaves ng alubihod ang pochero naman me cabbage patatas string beans at hotdog ang bulalalo pechay, mais at patatas lang ang ingredients...pero masarap cila lahat....

Ang tanong ko naman - ano ang pag-kakaiba ng nilaga, bulalo at pochero.

KIM sana binasa mo ang ingredients wala namang oil ha so y would u saute it...onions do extract juices and it is sweet and mabango

tama yan. when the juice of the onion comes out by slow heating with the fish sauce being blended together and absorbed by the beef, a delicious taste is formed within the beef.

Question on Nilagang Karne Recipe
I have eaten nilaga so many times which were either karne (beef), chicken and fresh white fish but I have never cook it yet and I'm planning to try making it. I look at your list of ingredients or species and I don't see a mention of ginger which I believe was always used on those I have eaten before. Just curious, is ginger optional for the nilaga recipe or could it be a sort of variation? Will appreciate your reply. Thanks

I am a stay home mom for now since i am soon to deliver my 3rd child:) i tried your bola bola recipe and my family liked it:) tnx to this web site. Recipes are simple to follow. I am cooking nilagang baboy now, using the recipe of nilagang baka:) we'll see.... Whats the verdict:) tnx again.
