Boiled Chicken With Banana “Ubad”
Ingredients
3 tablespoons cooking oil
1 chicken (cut into serving pieces)
4 ripe tomatoes (sliced)
Salt to taste
Patis (fish sauce)
1 ginger (cut in pieces and crushed)
Banana ubod
* Internal white stem of a banana plant.
Preparations
Stir-fry the tomatoes, ginger and pieces of chicken in a saucepan. Sprinkle with salt to taste. When chicken turns light brown, pour enough water to cover. Bring to boil.
Meanwhile, prepare the ubod. Chopped into thin pieces until they become small like grains of corn. Squeeze off the juice or water. Set aside.
When the chicken is tender, add the ubod and continue cooking until the ubod is cooked. Season with salt or patis (fish sauce) to taste.
