Asado En Carajay

Ingredients

1 kilo pork chops or spare ribs
1 cup vinegar
1 clove garlic (crushed)
3 onions (1 sliced fine, others quartered)
8 tablespoons tomato sauce
4 tomatoes (sliced)
Salt and pepper

Preparations

Cut the pork into serving pieces and soak ten minutes in a mixture of vinegar, sliced onion, and salt. Set aside.

Drain and fry the marinated pork in hot cooking oil until golden brown.


Sauté the garlic, onions, and tomato sauce in about 3 tablespoons of cooking oil. When the mixture boils, drop the pieces of pork into the kawali (wok) and add a little water. Allow to simmer gently. Add the tomatoes and onion when the pork is tender. Season with salt and pepper. Serve hot!
