Arroz A La Valenciana
Ingredients
2 cups glutinous (malagkit) rice
1 chicken
1 onion (chopped)
Garlic (minced)
1 tomatoe (thinly sliced)
3 hard-boiled eggs (sliced crosswise)
˝ cup peas
˝ teaspoon pepper
˝ teaspoon salt
3 “saba” bananas (fried)
Preparations
Wash and cook the rice. Let cool and set aside.
Dress, disjoint, strip and chop the chicken meat; discard the bones. Sauté the chicken, onion, tomatoes, and garlic, then sprinkle with salt. When light brown, mix thoroughly with the cooked rice. Add the boiled peas. Season with salt and pepper to taste.
Serve in a platter then garnish with hard boiled eggs and fried bananas.
