Arroz A La Filipino

Ingredients

˝ cup glutinous (malagkit) rice
˝ cup white rice
2 small packages raisins
˝ small chicken
3 green bell peppers (chopped)
3 tomatoes (cut into serving pieces)
1 cup stock colored with atsuwete (annato seeds)
1 small onion (chopped)
1 tablespoon cooking oil
1 clove garlic (minced)
1˝ cup water
1 tablespoon patis (fish sauce)
2 fried eggs
1 banana (saba - sliced in halves)
Salt to taste
Patis (fish sauce)

Preparations

Strip the chicken meat, chop and discard the bones. Set aside.

Stir fry the garlic, onion, and tomatoes in a  skillet. When garlic is brown, drop the chicken, sprinkle with salt (or patis) and cook until chicken   turns light brown. Add the green bell peppers, rice, raisins  and stock colored with atsuwete. Season with patis and cook for another three minutes. When the mixture is well blended, add 1˝ cup water to cook the rice, raisins, and chicken. Cook over in a slow fire and stir well once in a while to prevent from burning.

When done, transfer the mixture to a pot lined with banana leaves. Continue cooking in slow fire. Garnish with eggs and fried banana.
